I’m quite a fan of cheese – throw pretty much any cheesy delight at me and I’ll scoff it down happily.
This might come as a bit of a surprise as I also for the most part advocate a dairy free diet.
Am I a hypocrite? Well here’s the thing….
I have found over the past few years that dairy isn’t helpful if you want to lean down and drop the fat. And it’s also not great for your digestive system along with the act that many commercial brands are pumped full of growth hormones….. all these together make it rather unattractive.
BUT. I’m also all about harmony and living a life full of the good stuff. So I found a COMPROMISE.
I eat clean, and dairy free 95% of the time and then when I want the cheese, I eat the cheese; I source local, artisanal, hormone free producers who are either organic, or follow organic principles. And then I enjoy making and eating all things cheesy like this rosemary and garlic baked camembert with roasted grapes and toasted baguette!!
I love this recipe because its a one pan/ tray dish and takes 20 minutes from start to finish. Perfect for picnic prep or a quick wine catch up with the gals.
