When I was asked to create a giant fresh berry pas

When I was asked to create a giant fresh berry pastry as a wedding cake for @micapaprika and @schalkiebez, I jumped at the opportunity to have some fun and put my creativity to the test. I have officially retired from the cake world but every now and then an opportunity knocks and I cannot ignore it!!

This was such a fun project and I am super stoked with the result. As always there were some real “fun” 🥴challenges along the way like a fridge that wasn’t chilling properly and an oven that didn’t want to heat up to temperature.... but those who bake will know that these little tests are part of the deal when you create edible art for a living!!! And I was happily able to work around these to get the job done 👌🏼

The pastry heart was 1m height x 1m wide by almost 10cm tall. Using 8kg puff pastry, 20lt custard and 5kg strawberries 🍓🍓🍓

I’m super grateful to those who lent a helping hand. Gladys for coming in to help clean and chop, my mum for the use of her oven for extra cooking space and for checking in on me during the weeks processes to lend support and encouragement and finally my @david.douglas9 for helping me carry the giant heart upstairsand into the venue, taking awesome pictures of me during the assembly process, for keeping my sense of humor in check and all the love and support you shower me with daily 😍

A special thank you to Ginny from the @theoysterbox !! It was absolutely fabulous working with you and what an outstanding job you and your team did creating such a special day for such special people!!

The tricks behind getting the shot!! Food styling and photography takes loads of extra work to get the food looking as fly as possible. I’ve been working with @jononienaber from @purephotographicstudio and the awesome team at @pedros_flame_grilled_chicken for the past few years. I’m kinda like an all in one mum for food photography. When required to I can cook, style and photograph food products. And having had 2 cafes, a catering business and and online cakery I’ve got a unique and broad understanding of the food business.

One of my favourite parts of what I do is creating content for brands that I work with. For this project with @za_supreme I spent time testing and reshooting recipes from their website as well as creating some content for them to use on their social media platforms.

I’ve always loved watching small businesses make

I’ve always loved watching small businesses make their mark in the world. @nowcoffee_dbn opened their drive through coffee business slap bang in the middle of 2020.... the following year they opened the cafe and this year they’ve opened other drive throughs and even started roasting their own beans.... along with having been nominated for numerous awards!

A while ago I was privileged to have had the opportunity to capture some moments for them. And it feels fitting to share them now in celebration of their achievements!!

Guys your passion and drive are awes inspiring!!!

Can’t wait to see what’s in store for 2023 🥂

2022 you’ve been a toughie. Not sure how it’s possible to have the worst year of your life also be one of the best years..... but maybe that’s testimony to the idea that it’s only through challenges that we are able to grow and thrive....

Who knows really...?

All I can say is flip it’s been hard and yoh am I broken. Thankfully God’s had my back and carried me through. He’s my flippen hero 🦸🏻

Over 2 years ago, just as we were all reeling from the first wave of the big “C” I had the privilege of attending and documenting a farm to table lunch created by the talented team at @thelivingroomatsummerhill in collaboration with @farm_to_forks !!! I marveled at the flavour pairings and loved watching the team work together with confidence and clarity. This was an outdoor feast prepared over coals.... What an amazing achievement that a short two years on, they hold the title of @eatoutguide Restaurant of the Year 2022 showing the country and the World that Durban can bring it!! Congrats guys what an amazing achievement 🦾
